Quick, Easy, and Light Summer Dinner #1


As the weather slowly, but surely, gets warmer in NYC, the last thing we want to do is weigh ourselves down with heavy, fatty, calorie-dense evening meals. This chicken dinner recipe is not only filling, high protein, high energy, and light, but the prep time is less than 10 minutes! This allows us busy New Yorkers to do far more important things, like planning our wardrobes for the beach. I generally eat this meal at least two times a week. It's an ideal choice for Monday night, particularly after a wild weekend of food promiscuity.


Hugh's Chicken Breast Salad Dinner


One package of Perdue Short Cuts Italian Seasoned Chicken Breast Strips
Your favorite bag of prewashed mixed salad greens
Handful of grape or cherry tomatoes
Balsamic vinegar


Heat the package of chicken breast strips for 2 minutes in the microwave. Be sure to vent the plastic package with a fork or knife before placing it in the microwave. Mix salad package and tomatoes (you can also add as many other raw vegetables as you desire, such as broccoli and cucumbers). Cut open plastic package, and mix the warmed chicken breast strips on the salad. Add balsamic vinegar. EAT!!!


The warmth of the chicken and seasonings provides a wonderful flavor to the balsamic vinegar, eliminating the need for high-calorie oil on the salad. For dessert, I have a small container of fresh strawberries or blueberries, topped with a package of Equal or Splenda. Blueberries have the highest concentration of antioxidants of any food. Antioxidants help retard the aging process. I plan to eat them by the ton once they come back into season. Total calories from the Meal (including fruit)=around 500. Energy and satisfaction=off the charts!
